THE STORY

The story behind this place

Bringing Tainan's childhood ice desserts to Shipai

The owner, originally from Tainan, opened 水龜伯古早味 (Shui Gui Bo) out of nostalgia for the ice desserts of his childhood at a sugar factory. He extended those memories into the space, bringing rain capes, bicycles and other objects from his old home into the shop. A bowl of dessert in the city becomes connected to farmhouse life and childhood memories.

Brown Sugar Shaved Ice

Choose four toppings. Mixed taro balls, speckled beans, peanuts and mung beans each bring their own texture. The ice granules are moderately sized, and the brown sugar sweetness does not overwhelm the toppings.

A TASTE OF TAIWAN

Taiwanese desserts through the seasons

Taiwan's street-side desserts often change by pairing the same beans and chewy balls with different hot and cold bases. 水龜伯 serves brown sugar shaved ice in summer and hot peanut soup in winter, with peanut-coated hot mochi adding another aroma—a taste of desserts adapting to the seasons.

FIRST VISIT

First visit: how to order

01
Order at the counter, then find a seat

Follow the on-site queue to choose toppings and order at the counter, then find your own seat. Return your dishes to the collection counter when finished.

METROBITES LOCAL TIP
Cut the mochi small before coating it

Use a fork to divide the hot mochi into small pieces, then coat the cut surfaces with peanut powder. It is easier than biting into a whole piece and gives each bite a more even coating.

✨ AI Visit Notes

水龜伯古早味 (Shui Gui Bo) is in Taipei's Beitou Shipai shopping district, about a 6 minute walk from exit 1 of Shipai (石牌站). This Taiwanese dessert shop focuses on brown sugar shaved ice, tofu pudding, hot mochi and winter sweet soups. Red brick, lanterns and old farm tools fill the dining space, with a self-service flow from choosing toppings to returning dishes. If you like a lively, nostalgic atmosphere and dessert choices throughout the year, come build a bowl of your own.

The setting and atmosphere:Red-brick pillars and lanterns greet you first. Rain capes, hoes, bicycles and other old objects are dotted around the dining area, as if the belongings of a rural household had moved into a city ice shop. Shaved ice and sweet-soup toppings are displayed at the counter, along with ordering photos. The setting is distinctly old-fashioned, and queues can form even on weekday afternoons. If seats are full, the usually quick pace of eating dessert means a table may open after a short wait. It is lively, with a fast turnover.
Getting there and things to know:The address is 台北市北投區石牌路二段75巷8號, near Shipai Night Market, about a 6 minute walk from exit 1 of Shipai (石牌站). The process is self-service: choose toppings for your dessert and order at the counter, then find a seat. Return bowls and plates to the collection counter afterward. Staff work briskly through the queue. If the shop is full, follow the on-site waiting flow; there is no need to linger over choices at the counter.
● Brown Sugar Shaved Ice

Brown Sugar Shaved Ice comes with four toppings of your choice. This bowl has mixed taro balls, speckled beans, peanuts and mung beans, covering the ice with different colors and textures. The ice is neither so fine that it melts instantly nor so coarse that it takes effort to crunch. Brown sugar syrup adds aroma without making the bowl too sweet to taste the toppings. From beans to taro balls, each keeps its own texture.

● Hot Brown Sugar Mochi

Hot Brown Sugar Mochi is lifted from hot syrup and coated with so much peanut powder that the white mochi is almost hidden when it reaches the table. It is soft and springy, with peanut aroma unfolding first and gentle brown sugar sweetness following. Use a fork to cut it into small pieces: bite-sized portions are easier to eat and let the peanut powder coat every side evenly.

● Twin Jelly Milk Shaved Ice

The 'twin' in Twin Jelly Milk Shaved Ice refers to grass jelly and almond jelly, whose black-and-white colors make a striking contrast. Red beans, mixed taro balls and glutinous rice balls join them, with milk poured over a base of brown sugar shaved ice. Two silky jellies, chewy balls, soft red beans and cold brown sugar ice come together, so each spoonful can offer a different combination. It suits anyone who likes plenty of toppings.

● Peanut Soup with Fried Dough Sticks

Peanut Soup with Fried Dough Sticks is a warm dessert combination more suited to winter. The peanuts are cooked until soft and creamy, and the hot soup has a gentle peanut aroma. Dip pieces of fried dough into the soup: the outside absorbs liquid while some airy texture remains, then softens further if left longer. A sip of soup followed by a bite of dough gives warmth, creaminess and a shift from crisp to soft in the same bowl.

Uncle's words: Choosing toppings is like picking memories. Some go for taro balls; others stay loyal to peanuts. Our bowls may differ, but once we sit down, each of us can find a taste of the old days.
💡 Ordering Notes

In hot weather, choose between Brown Sugar Shaved Ice and Twin Jelly Milk Shaved Ice. The former lets you pick four toppings; the latter brings grass jelly, almond jelly, chewy balls and red beans together. Add Hot Brown Sugar Mochi for something warm. In winter, Peanut Soup with Fried Dough Sticks is a better fit if you want warmth all the way through. Decide on favorite toppings before joining the queue to make ordering smoother.
