TAIWAN, ONE DISH AT A TIME

Shui Jiao — Boiled Dumplings水餃 · Shui Jiao

A satisfying meal, one dumpling at a time.

Boiled dumplings bring a meal together inside little wrappers: savory meat, the sweetness and moisture of vegetables, and dough cooked until tender. They need no elaborate appearance to work as everyday food. A plate with soup or a side offers a flexible meal, familiar from Taiwanese homes as well as neighborhood dumpling shops.

Shui jiao are not unique to Taiwan, but local shops give fillings, wrappers, and dips their own balance. Your first order need not be the most unusual flavor. Start with something familiar, such as cabbage and pork or a chive filling, then taste with little sauce before adjusting the dip to your liking.

A FEW WORDS GO A LONG WAY

Your first order, made simple

Start with the menu and portion size. The Chinese phrases below can help you ask; choices and adjustments depend on the shop.

01

Check the filling

高麗菜的是豬肉餡嗎?

Does the cabbage filling contain pork? A vegetable name does not mean meat-free.

02

Decide on the portion

一份有幾顆?可以混口味嗎?

How many are in a serving? Can I mix fillings?

03

Choose soup and a dip

有什麼湯能搭?醬可以自己調嗎?

What soup could I have with them? Can I mix my own dipping sauce?

FIND YOUR FLAVOR

Boiled, pan-fried, or steamed?

Compare the preparation, texture, and serving style to decide what you would enjoy.

水餃與鍋貼

Shui jiao and guo tie

Boiled dumplings emphasize the tender, springy wrapper; potstickers add a browned bottom and a contrast between surfaces.

What to look for

Soft all around or a crisp base.

02

水餃與蒸餃

Boiled and steamed dumplings

Both enclose a filling, but boiling and steaming affect the surface, moisture, and chew of the dough differently.

What to look for

The wrapper texture you prefer.

GO A LITTLE DEEPER

A plate made for sharing

Different appetites can meet around one plate

A plate of dumplings lets diners share according to appetite. At a shop, you can try different fillings together instead of repeating an entire meal for each person. Ask whether mixed flavors are possible and how minimum portions work before ordering.

Cabbage and chives offer two starting points

Cabbage can bring sweetness and moisture to a meat filling; chives contribute a more pronounced aroma. Shrimp and other additions provide another texture. A longer or more unusual name is not automatically a better choice. Begin with the flavor you would enjoy.

Keep the dipping sauce in proportion

Soy sauce adds saltiness, vinegar acidity and aroma, and garlic or chili another layer. Try a little plain before adjusting your dip. If the shop provides a finished sauce, lightly dip one corner first so the wrapper and filling remain noticeable.

Dumplings in soup make a different meal

Beef broth or hot-and-sour soup can give the same dumpling another setting, coating its wrapper with flavor. Look for these options if you already want soup. Check the broth ingredients separately from the dumpling filling, since the meats and seasonings may differ.

Before your first order

Can I order just a few dumplings?

It depends on the shop’s pricing and minimum portion. Some sell by piece; others serve a fixed number. Ask first.

Are cabbage dumplings vegetarian?

Not necessarily. Cabbage commonly accompanies pork. Choose an explicitly suitable item and confirm the preparation if you need a vegetarian meal.

How many should I order for a meal?

Look at the size and number per portion, then consider soup and sides. No fixed count works for every shop or appetite.
