TAIWAN, ONE DISH AT A TIME

Steamed Dumplings蒸餃 · Zheng Jiao

Lift the steamer lid. Let the dough speak.

Steamed dumplings make a quiet entrance. A lifted lid releases the aroma of dough and filling, without a sizzling pan or a large bowl of broth. Each dumpling keeps its shape, showing folds, wrapper thickness, and a full center. The dish puts the balance of dough, meat, and vegetables clearly in front of the diner.

At Taiwanese noodle restaurants, a basket can become a meal with hot-and-sour soup and sides, or be shared alongside other dough-based dishes. Wrappers may be delicate or more substantial, with pork, shrimp, vegetables, or another filling. Rather than expecting every piece to gush with soup, start with the steamed wrapper and the filling’s own flavor.

A FEW WORDS GO A LONG WAY

Your first order, made simple

Start with the menu and portion size. The Chinese phrases below can help you ask; choices and adjustments depend on the shop.

01

Ask about the house filling

招牌蒸餃是哪種餡?

What filling is in your signature steamed dumplings?

02

Check the basket size

一籠幾顆?可以分食嗎?

How many are in a basket? Can we share it?

03

Choose a soup

有什麼湯可以搭?

What soup could we order with them? Start with a light touch of dipping sauce.

FIND YOUR FLAVOR

Steamed dumplings, soup dumplings, or boiled dumplings?

Compare the preparation, texture, and serving style to decide what you would enjoy.

01

蒸餃與小籠包

Steamed dumplings and xiao long bao

Both may arrive in steamers, but common shapes, dough, and the amount of soup inside differ.

What to look for

Wrapper and filling, or a soup-filled center.

02

蒸餃與水餃

Steamed and boiled dumplings

Steaming and boiling affect the wrapper’s surface and moisture differently.

What to look for

Choose the kind of dough texture you enjoy.

GO A LITTLE DEEPER

A basket worth taking slowly

The steamer preserves the folds

Without tumbling in boiling water, steamed dumplings can show their formed shape and folded edges clearly. Different dough recipes and thicknesses still produce different bites. Try a little edge, then a more generously filled part, to notice the contrast within one dumpling.

Juicy does not always mean full of soup

Meat and vegetables can release juices during cooking, but abundant soup is not necessarily the focus of zheng jiao. Enjoy them for the dough and filling. If you want a dumpling known for broth inside its wrapper, look at xiao long bao or a soup-dumpling option.

Thin and thick wrappers each need balance

A thin wrapper may let the filling lead, while a thicker one contributes bread-like aroma and chew. Thinness alone is not a quality scale. What matters is how wrapper and filling eat together, especially when comparing several fillings.

Soup and sides give the basket a companion

Hot-and-sour soup adds acidity and spice; a clearer soup can leave the filling’s flavor more prominent. A side dish introduces another texture. Pick according to appetite rather than feeling every steamer on the menu needs to join the same meal.

Before your first order

Are steamed dumplings always full of soup?

No. Many emphasize the wrapper and filling, and should not be expected to behave like soup dumplings.

Can one basket be a meal?

That depends on the number, size, and your appetite. Check the portion before deciding about soup or sides.

Can I dip them in vinegar?

Use a little if you enjoy it and it is available. Sauces vary by shop; tasting the filling first helps you choose the amount.
