The 初魚 brand began as a small omakase restaurant in 2015, later developing separate sushi and teppanyaki concepts such as 初魚鮨 and 初魚鉄板料亭. 初魚 鮨-台北明水店 (Chu Yu Sushi Mingshui) follows the rhythm of counter omakase. The point is not smoke and flames with every dish, but a progression of scallop, snow crab, Shirayaki Eel, salmon roe, and abalone chawanmushi. Ingredients and cooking that hold their own are more satisfying over a meal than constant cries of surprise.

● Seared Scallop with Nori
Seared Scallop with Nori is lightly torched on the surface to bring out sweetness and aroma, leaving the center tender and moist. Crisp, savory nori completes the bite. The satisfaction comes from temperature, tenderness, and crunch arriving together, without piling on sauces. Eat it when it arrives; nori does not get crisper while you take ten photos.

● Snow Crab Nigiri
Snow Crab Nigiri centers on the crab's delicate sweetness. The rice's acidity and temperature are controlled so it does not overshadow the seafood, leaving a clean, gentle impression. This is not a sauce-heavy sushi ambush. Take a moment to notice the crab sweetness after the bite. Eating it in one bite is basic etiquette; forcing it into two makes the crab and rice liable to escape separately.

● Shirayaki Eel
Shirayaki Eel uses no thick, sweet sauce to hide its flavor. The outside is lightly crisp, the inside tender, and charcoal aroma follows the fish without an obvious fishy smell. Without the protection of kabayaki glaze, heat control and the fish's condition are more exposed. It looks simple, but flaws have nowhere to hide.

● Salmon Roe
Salmon roe has a membrane with a distinct texture. Bite through it and concentrated savoriness and richness are released, making a bigger impression than smaller roe. Fans enjoy that moment of bursting; diners unused to the membrane may need to adjust. It is a texture preference, not a reason to pretend you know and love everything at the counter.

● South African Abalone Chawanmushi
South African Abalone Chawanmushi carries savory broth in silky steamed egg, with thick, springy abalone bringing smooth and chewy textures together. It is not the most photogenic course, but it gently rounds off the preceding seafood flavors. Spoon it slowly while hot. Do not rush to pick out the abalone and leave a lonely bowl of egg behind.

Arrive on time and communicate dietary restrictions beforehand, then eat at the chef's pace. Do not leave nigiri or nori bites sitting. Ask about drinks and extras according to that day's set.

📌 Editor's Take
Chu Yu Sushi Mingshui does not turn every course into a performance. Nori-wrapped scallop opens with searing and crunch, snow crab nigiri brings delicacy, Shirayaki Eel shows heat control, and salmon roe and abalone chawanmushi add further textures. My take: the point of omakase is to enjoy the whole arrangement. Wait only for luxury ingredients, and you miss the work that came before.
