THE STORY

The story behind this place

A staff meal steps out of the nightclub kitchen

侯圳生 once worked as chef at Room 18. After refining the beef noodles he cooked as a late-night staff meal, he entered them in competition and won the red-braised division at the 2011 Taipei International Beef Noodle Festival. He later left the nightclub kitchen to open a noodle shop on Tonghua Street, turning a flavor once reserved for the staff table into a bowl anyone could sit down and enjoy.

The skin is fried dry and crisp while the meat stays juicy, and the heat cuts through the richness of frying. Eat them hot for the clearest contrast between brittle skin and tender meat.

A TASTE OF TAIWAN

Taipei beef noodles make room for new broth flavors

Here, beef noodles retain both red-braised and clear-broth paths while making room for ideas from Western cooking. Diced tomato enters the red-braised broth, while cream and garlic shape the clear version, showing travelers how a chef’s background can give Taipei beef noodles distinct flavors within one shop.

METROBITES LOCAL TIP
Taste the original broth before adjusting sourness and heat

When the red-braised noodles arrive, taste the broth on its own first to register the sauce aroma and body. Then add pickled mustard greens or chili to taste, making the before-and-after difference easier to notice.

✨ AI QUICK TAKE

If you are looking for beef noodles near Liuzhangli (六張犁站) or a hot late-night meal around Tonghua Street, the name of 18冠軍牛肉麵 comes from winning the red-braised division at the 2011 Taipei Beef Noodle Festival. Its signature broth is also described as having evolved from a Room 18 staff meal. Braised Champion Beef Noodles take the rich route, Clear-Broth Beef Noodles keep the flavor clean, and the signature Spicy Fried Chicken Wings steal plenty of attention with crisp skin and heat. “Champion” is not an instruction to eat on your knees; it tells you that the bowl has a history. Set the title aside and sip slowly to get closer to what it really is.

UNCLE’S LINE: The word “champion” sends expectations soaring. I’m getting settled in my chair first, then we’ll see whether the broth can hold them up.
INTERIOR AND DINING MOOD:The room is arranged as a straightforward noodle shop, and neither the seating nor table spacing encourages a long stay. Orders can take time at peak hours, while late-night diners continue to arrive in the evening. It suits one person eating noodles quickly or a group of two or three adding wings, but not ten people turning the shop into a party venue. If time is short, avoid the meal rush rather than staring down the clock while waiting for noodles.

LOCATION AND VISIT NOTES:The address is 台北市大安區通化街171巷24號 near the Linjiang Street commercial area, about a 10-minute walk from MRT Liuzhangli (六張犁站). The shop has previously offered one free broth refill. Current refill rules, late-night hours, waits, and sellouts follow the latest shop notices and on-site policy.
● Signature Spicy Fried Chicken Wings

The wing skin is fried dry and crisp enough to make an audible crack when bitten, while the meat remains juicy. The heat cuts through the oil better than a completely mild seasoning. The first wing is exhilarating; by the second, the richness begins to catch up, so this is best shared by at least two people. Eat them hot, and do not let the crisp skin retire while you take photos.

UNCLE’S LINE: The first bite of fried chicken wing is romance, the second is reality, and by the third you’ll know whether you and chili have a future together.
● Braised Champion Beef Noodles

The red-braised broth is concentrated and full-bodied, with spices and sauce aroma pushed clearly forward. It lands with strength without leaving only grease behind. The beef is stewed soft yet keeps the fibers of each chunk, rather than disappearing when touched by chopsticks. Taste the broth plain before adding pickled mustard greens or chili as needed. Do not turn the champion into your own mixed soup the moment it reaches the table.

● Clear-Broth Beef Noodles

The clear version pulls back the spices and dark sauce color, focusing on the sweetness of meat stock and a clean finish. It suits diners who do not want something too rich. It is less forceful than the red broth and will not make you pound the table at first sip, but it remains easy to drink slowly. If the shop’s name brought you here for the first time, order one of each with a companion and swap tastes.

💡 A SMALL ORDERING NOTE

Two people can order one red-braised bowl and one clear-broth bowl, then share a serving of spicy wings. Compare both soups before using the table seasonings. If refills are still offered, ask midway through the meal; do not turn a late-night bowl into a capacity test merely because something is “free.”

  • LOCATION:台北市大安區通化街171巷24號, about a 10-minute walk from 六張犁站.
  • BACKGROUND:Winner of the red-braised division at the 2011 Taipei Beef Noodle Festival, with broth developed from a staff-meal lineage.
  • HIGHLIGHTS:Both red-braised and clear broths, plus crisp, spicy chicken wings.
  • GOOD FOR:Broth-comparing beef noodle fans and anyone wanting hot soup for dinner or a late-night meal.

📌 EDITOR’S SUMMARY

18冠軍牛肉麵 has an award behind it, but whether you return still depends on the body of its red-braised broth, the easy-drinking clear soup, and the crispness of its wings. Do not expect “champion” to mean fireworks in every bite. Think of it as a noodle shop where you can still sit down late at night and reliably receive hot broth, beef, and something fried.
