THE STORY

The story behind this place

From Japanese training to market noodle-rice

After learning from a great-uncle in Japan, Tai Chien-kuo opened Qing Hua Xuan with his wife in Shuiyuan Market. Starting with ramen, he saw Gongguan's preference for fried rice and made the accompanying noodle-rice mix the signature.

Qing Hua Xuan | The unique taste of noodles and rice sharing a wok in Shuiyuan Market

On Shuiyuan Market's first floor, 清華軒 puts fried noodles and fried rice together instead of choosing one. Short noodles, separate rice grains, and cabbage meet high heat, crossing spring, dryness, and sweet crunch before nori adds Japanese aroma. The dish extends the owner's study with a Japanese great-uncle, evolving from early ramen into the signature. Different meats preserve the hybrid core, best enjoyed steaming hot.

Interior and atmosphere:The stall is on the first floor near the Tingzhou Road exit. An open kitchen faces limited stainless-steel seats, so diners watch the owner toss each wok. The corridor and exit bring airflow. Most eat and leave or take away, and peak queues follow stall guidance with fairly quick seat turnover.
Location and arrival:The stall is at 臺北市中正區羅斯福路四段92號水源市場一樓20號攤位. From Gongguan Station Exit 1, walk about two minutes to the market. Enter from Tingzhou Road; the stall sits by the exit with signs for 清華軒 and fried noodles-and-rice.
● Char Siu Fried Noodles and Rice

Short noodles, day-old rice, and cabbage stay balanced so all three enter each spoonful. High heat keeps rice separate, noodles chewy, and cabbage moist and sweet. Small char siu pieces distribute meat aroma, while shredded nori adds umami and Japanese character. The substantial plate is driest and most aromatic while hot.

● Beef Fried Noodles and Rice

Nori tops the plate, so soy and seaweed aromas arrive before beef, rice, and noodles overlap. Grains remain separate, noodles resist mushiness, and cabbage adds crunch and softens richness. Beef provides tender chew beyond starch. Light eaters should state preferences when ordering, then adjust gradually at the table.

● Chicken Fried Noodles and Rice

Chicken keeps the signature noodle-rice mix mild and makes cabbage sweetness clearer. Dry rice, springy short noodles, and chicken alternate but connect through soy aroma; nori brings light ocean savor. Request extra spice before cooking, or begin plain to understand the proportions.

雞肉炒麵飯
The appeal is tasting noodle spring, loose rice, and cabbage crunch in every spoon. Char siu is aromatic, beef tender-chewy, and chicken mild, without any meat stealing the hybrid's identity.
✦ Ordering tip

Each plate is wok-cooked to order. Decide meat and flavor while queueing; request chili in advance. Pepper, chili powder, and soy sit on tables, so taste plain before adding. Seats are limited; if full, wait along the stall flow rather than blocking the aisle.

  • Location:Stall 20 on Shuiyuan Market's first floor, near the Tingzhou Road exit.
  • Transit:About two minutes from Gongguan Station Exit 1.
  • Setting:Open market stall with made-to-order wok cooking in view.
  • Feature:Short noodles, rice, and cabbage stir-fried together and topped with nori.
  • Reminder:State chili and flavor adjustments when ordering.

✦ Editor's summary

清華軒 makes fried noodles-and-rice memorable. High-heat tossing, sweet-crisp cabbage, and savory nori keep noodles and rice distinct yet integrated. Char siu emphasizes meat aroma, beef adds tender chew, and chicken stays mild; all preserve separate grains and resilient noodles. Walkable from Gongguan Station and near the market exit, it fits a Gongguan meal, especially eaten hot to appreciate this hybrid.
